Pizza on the Big Green Egg

Class Description:
Come learn the inns and outs of making pizza on the Big Green Egg with our own Chef Glenn Orton.  This will be a 2 hour class starting with the basics of how to set-up your egg for cooking pizza.  One will also get to see how to make pizza dough, and pizza sauce from scratch.  During the class you will also get the opportunity to create your own pizza, including how to toss and stretch the dough, properly dress the pizza and how to transfer your prepped pizza into the egg.  We will also discuss proper cooking temperatures and some other “secrets” for getting that brick oven, look, and taste.  The class will culminate with a “Pizza Party” where we will get to taste the spoils of our efforts.
Chef Glenn Orton:

Chef Glenn Orton is a Summa Cum Laude graduate of Johnson and Wales University with a degree in Culinary Arts.  Chef Glenn worked in and around the Atlanta area as a chef for over 15 years with stints at Holyfield’s New South Grill, the Waverly Hotel, and as Executive Chef at Padriac’s Casual Dining.  After thru-hiking the Appalachian Trail in 2007 Chef Glenn decided to put the restaurant business aside and took a position as the Retail Manager of High Country Outfitters to pursue his other passion, the outdoor industry.   Chef Glenn’s introduction to the Big Green Egg was love at first site.  For the past three years Chef Glenn has been perfecting his skills on the BGE and is now ready to pass that knowledge on.  Sign up for one of his classes or just stop in to the Buckhead location to talk Big Green Egg.

Pork Basics
Visiting pit master and instructor, Richard Lea, BBQ Expert
from Five Star Culinary Group, will share his AWARD-WINNING secrets to successful barbecuing and grilling pork on the Big Green Egg.
This two hour class, presented by High Country Outfitters, will include:

  • Big Green Egg Basics - heat, how to use, etc.
    Pulled Pork - location of cut, type of meat, etc.
    Prepping the Pork - rubs, injections, amount of time needed
    Cooking the Pork - temperature, time, smoke (types of wood and their flavors)
