Big Green Eggs and Honey-Orange-Ginger Glazed Ham
1 cup Orange Juice
½ cup Apple Juice
½ cup Pineapple Juice
¼ cup Red Wine
¼ cup Brown Sugar
½ cup Honey
1 tsp whole cloves
1 cinnamon stick
3 tsp fresh ginger, grated
2 clove garlic, minced
1 bone-in Ham
Prepare Egg for indirect cooking. I use Apple wood Smoking chips as well.
Place all ingredients in a sauce pan and bring to a boil, simmer for 5 min and then keep warm throughout the cooking process.
Score fat on ham in a diamond pattern. Place ham on v-rack in a drip pan and place on the egg as it is coming to temp to get the maximum smoke. Cook at 325oF basting with glaze and pan drippings every 45 min. At the end of cooking increase heat and baste frequently to create a caramelized glaze.
